I'll aim for hard maple but am wondering if curly soft maple would make a decent chop - or would it have stability issues? Certainly would look awesome.
If you've got some soft maple around that is the right size, use it. It'll work fine.

That's the truth.. My bench TOP is soft maple.. Definitely don't need it any harder than it is.

I re-did my kitchen in hard maple. After I started I was sorry I did because it was a bear to stain, etc. Stay with the SM
I did my chop in curly maple and it's been fine so far, about 4 years. Did the deadman as well for balance.
