I don't like poplar and I don't use it for really anything.

End-grain pine cutting boards actually hold up quite well. The thing you need to worry about is the resin in the wood.

To be honest, it should be a non-issue as maple is relatively inexpensive and a far better choice with none of the drawbacks.
