What kind of knife is this? - MauleSkinner - 01-02-2021 I decided I wanted to make some friction folder knives, and this kit was discounted for Cyber Monday or something, so I bought it. It’s simply referred to as a “Japanese” knife kit. https://www.leevalley.com/en-us/shop/tools/hand-tools/knives/76970-japanese-knife-making-kits Turned out pretty well, I think, and it takes a nice edge. Just wondering what it’s intended use is. The angle of the blade almost feels like a kitchen knife...maybe for my camp kitchen. The blade is about 3 3/4” long, overall length about 9”. Judging just by the photo, it didn't appear to me to be a folding knife..it has an "odd" appearance for a carving knife, but it does seem to be one..not one I would choose for that purpose, however. The folding knife is definitely not a carving knife. I realize that a folding kitchen knife isn’t a “thing”, but the shape and style don’t really match the function of any folder I’m aware of, either. The folding knife is definitely not a carving knife. After reviewing other websites with more information, I agree that the folder is intended to be a kitchen knife and not a carver. One pic I saw the knife was being used to cut cheese. Doesn't seem to be very well suited as an EDC (every day carry), since the handle is rather fat. Still, not very traditional for a Japanese kitchen knife. It's a compromise between a fixed blade chef's knife and an EDC folder.
