What's probably most important is the Neck Joint, for long term servicing.

Taylor and Collings and some others just went to a nice bolt-on neck on their acoustics.

From the original YouTube presentation, the hide-glue dovetail neck joint isn't necessarily always easier to detach (with heat and water) than Titebond I.  He struggled mightily to get that hide glue loosened in that video.

I'm working on a new guitar right now.  I have more Titebond than I have hide-glue, and I will apportion the glues such that more of the body is built with Titebond, but the neck joint will use hide glue.

I've always used TB Original. Hated hide glue, and the newer TB's

My build is about 85% done.    I couldn't take the anticipation any more, so I installed just enough stuff to check the sound in 1st chord position.   The unconventional (but well liked by many) oak sides and back is really sounding good.

Depending on component, I have Titebond Original, Titebond III, JB-Kwik, Titebond Hide Glue, and CA glues in this thing.   It's my 2nd guitar and it sounds way better than the first.

Now I need to go back and fix all the steps I shortcutted...

Yes, I've pulled off the gloves and I'm getting fretting calluses going again!
