C'mon!  They gave you subtitles.  He mumbles a bit, I'll admit, but his accent is pure Siberian.  

I never heard him mention the species.  Only caution was to ensure that your choice of wood was straight-grained.  Would imagine it's white birch.

I cringed every time he shaved along the grain toward his hand.  The saw kerfs notwithstanding.  I clamp my spoons with wood, not flesh, when I carve.

The species is cedar (translation so not sure), and you can turn on auto-translate on the subtitles.
