I use a paste made of fine sawdust and whatever finish I'm going to use on the piece.  Works well and I know it will be perfectly compatible with the ultimate finish. -Howard

In the past I've purchased "Japanese VG10 knife blade blanks" and made handles for them.  The steel is fantastic for holding edges and the blades are beautiful.  Try googling and see what is available...
