As long as you don’t put on so much back bevel that you don’t have a clearance angle, I don’t see a problem with bevel-up planes.

I haven’t seen the bench/vise in person, but I’d assume that if you determined the vise placement to be bad, it would still be moveable.

Well, here’s what I ended up doing...I found somebody who used a brass rod, but I had some thick (3/16”j bamboo skewers around, so I used that.
