Should have mentioned it will have legs to carry the load of the top. Frame and panels will be mortised into the legs. Everything gets paint but the top and SS.

I'd do the furniture marker as needed and leave it at that. If/when it wears off, repeat. I think you're asking for a mess applying the poly. 20 years is pretty good for a floor....
