Colt Maxicut RotoStop is what I bought when I did several pepper mills.  Ease of bit change is amazing! I did not realize they had closed up shop.

I had the same problem but was not as smart as you.  I found a nice Jet table saw on Craig's List and gave away the DeWalt. Smart thinking on your part..

Haven't purchased any Maple ply in a while, but the Birch with two "good" sides is about $20 higher.  For me, the lighter side would be the "good" side.

Filling and stain is a risk I would not take.  In the Dallas area there are numerous places that will sand a wide piece.  I have used them several times.  The best place, Fort Worth Plywood, has a 50"...
