If I were to halve a 3' diameter disc on a table saw, I would need to come up with a very large sled, unless I am missing something... Otherwise, the paper joint sounds like a great and creative solut...

I would attempt at 45 degrees and with a sacrificial "snipe tamer" both as noted above. With very sharp blades, and only if very confident that the glue joints are intact.
