I finally delivered it today and the customer was ecstatic when she saw it assembled.  Lots of mistakes made and lessons learned.  If I build another it'll be a LOT faster.

Having run both 5hp 3ph with a VFD and a 3hp 2ph, I would go with the 5hp for the reasons you listed.
