I am going to have a booked & butted claro walnut burl veneer in a piece made from red oak. The red oak will probably have something like a honey amber dye with antique walnut or java gel stain toner. For the walnut I am looking to just pop the grain. I am not looking to particularly move the color any direction. Top coat is going to be Enduro clear poly. Any suggestions on where to start with the finish for the walnut veneer?

Walnut oil from the grocery store? How long should I wait before putting a seal coat of shellac?

Consider garnet or ruby shellac - no need for sealer.

I use Shellac first.
IIRC, I got my Ultimate Walnut Oil by Mahoney's Finishes at a WW show. It can be ordered online.
