Lee Valley has what they call "brass insert nuts" - also have a nice driver tool to install them.
What is the technical term for this?

Kind of off topic but why would you need a threaded insert for bottle stoppers?
I have turned LOTS of them and didn't use a threaded insert.

Guess I don't see why this won't work......When you thread the fastener in, it tightens up the insert so it holds better.....

Idk if that's why the OP wants a threaded insert. If it's permanently attached, I think a lot of the wood versions might work better than the one shown in the OP. I recall that you can get the wood inserts that thread into the wood at the BORGs.

The pic I posted is straight from a pen turning supplier, and it's epoxied into the stopper top so you can change either part to suite the customer.

I will repeat what I said earlier. The knurled inserts are for plastic. They will fail quickly in wood.

i had always heard those called a Knurled nut. Once you have a good search term, then you just need to add your sizes, and see if you can find a match.
Several on E-Bay if you need quantity Says custom specs are available, look out wallet Search here is awkward
