Never owned a Japanese chisel or waterstone, but finally, I have a Japanese made  hand tool: soft jaw pliers. Chris Schwartz mentioned the utility of soft jaw pliers in a post recently, and although these are not the ones he recommended, they are less expensive, and are nicely made (better than chinese, although not as good or expensive as Klein):
