You can also cut marble tile to size.  That is just 3/8" thick and the edges can be sanded smooth. 

Also soap stone is available as "scrap" from soap stone sink manufacturers.  Black an matte finish.  It offers a nice contrast.  The tiles are $9.00/square foot.  Each tile will probably get you three cuts.  So pretty cheap.

Not clear if you need a sill and/or bullnose to 'case' around the window, but FWIW you can just rip what you need from tiles and put your own bullnose on.

I did this recently for ~20 lf of porcelain tile. That has through body color, but obviously so do marble and granite tiles. For non-through body ceramic tile, you could just paint the edges as long as its not in direct contact with water.

I used a diamond bullnose blade in my wet saw:

The aluminum edging trim looks very nice. I've done either regular tile cut to fit the niche with finished edge out, or something like marble wrapped all the way around the sides of the opening. I bought some that was overwidth and left the piece on the bottom wider than the opening was deep so that it create somewhat of a sill.
