I am designing and building a Shaker style blanket chest.

What sort of hinges were used on these, or what would you recommend?

The ones I've seen had mortised butt hinges. If you aren't wedded to period exact you might consider the blanket chest hinges sold by Rockers and others that limits how far the lid opens and has a damper so the lid can't fall shut.

Having been to a Shaker village a couple of times I'd say you can honor their tradition either by doing it as they would have or by picking up a new development the piece more simple, elegant, and functional. They were simplifiers, not technologically backward.
