I've been using a jointer 'cup down' for 40 years.  Never had a problem I'd associate with using too much pressure on either the infeed/outfeed end or directly over the cutter head, and might suggest that frequent problems are related to technique. 

I'm also a guy that knows there's almost always more than one way to get things done... but I can't imagine why you'd want to use a jointer 'bow down' unless you wanted to purposefully leave the top face cupped (as you might for a fancy box lid).
