I scored some large blocks of Russian Olive and an apple tree. I was considering cutting blanks for the Christmas auction. Any interest or other suggestions/requests?

Another possibility might include some pepper/salt mill blanks.
IIRC, apple is a good wood for tool handles. If that memory is correct, then some apple blanks the right size for socket chisel handles could be cool as well.
If you wind up with odd-sized cutoffs, then stopper blanks or pen blanks for single-wood kits come to mind.
I look forward to bidding.

Definitely interested. You might consider also blanks for pistol handles, knife scales, saw handles (esp. for the apple), and bottle stoppers. The olive would make good pen blanks. I don't believe I've ever seen apple pen blanks.
