I was thinking that an insurance binder, liability disclaimer, and refundable bond would be in order. Their signature on the demo permit might hold some legal ground too. If they're not acting professional and permit expires, gets a stop work order, or cease and desist notice, the bond will pay for an excavator and dumpsters. If they work neatly, safely, and play well with others, they might be given the hand split granite foundation blocks too.

Take many pics of the barn - timberframe, floors, roof, siding, etc. Send those pics to some of the companies / individuals listed in this thread. That will thin out the list. Depending on the condition of the barn, you may or may not get any offers to reclaim the timberframe or the wood. If there are no takers, it's likely not worth the effort to reclaim anything and at that point, you'll need to have someone demo the barn.
