Waterlox is a great finish, but not available everywhere in the US due to VOC restrictions.  Check to make sure before you try to buy.  I used to live in LA County in California, and you just couldn't buy it there.  I could drive 90 miles and get it, though.  Couldn't get lacquer either!  I don't think Waterlox will darken the cherry any more than BLO would.  In time, the cherry will darken as it's exposed to light.  I would also recommend a light coat of dewaxed blonde shellac prior to application of either BLO or Waterlox.  Cherry can be a bit blotchy at times.

How about Tru-Oil ?? If it's good enough for your guns...it's good enough..... Too much gloss...knock it back with 0000 steel wool.
